The Grateful Bread's Artisan Rum-Based Vanilla Extract begins with Tahitian vanilla beans which we cold grind (heat is the enemy of volatile oils). We use approximately 1 pound of beans per gallon of liquid resulting in a 3X (three times "regular" strength) extract. We steep our ground beans in Railean Texas Rum for 6 months. We then strain the mixture rather than filter it to retain all of the vanilla "caviar". Then we transfer the raw extract to medium-char oak wine barrels for another year.
The result is a rich almost syrupy extract redolent of rich vanilla bouquets.
Since our extract is 3X strength it's as though your getting 7.5 ounces of extract!
