Prime Barbecued Brisket

We begin with a prime-grade brisket, beautifully marbled. We agressively trim it of excess fat & season it with white & black pepper & kosher salt, & smoke it for between 12 & 15 hours. For us, it's done when it's done. And it's done when it reaches an internal temperature of about 200 degrees, the sign of perfection in a barbecue brisket.

The briskets range in weight between 7 & 9 1/2 pounds. All we require to reserve one is a $25.00 deposit. It's a marvelous value at $14.00/pound. We'll either calculate the total at point-of-sale or when we deliver. We vacuum seal the briskets whole in a "sous vide" bag & freeze them. All that's necessary to prepare it is to place the brisket in a large pot of simmering water for about an hour & a half. You don't even get a pot dirty!
